Beaune 1er crules Champs Pimont

Beautifully oriented, this plot of Beaune Premier Cru known as ‘Les Champs Pimont’ is located south of Beaune, just a stone's throw from Pommard. Backing onto the hillside, it faces south and comprises very stony soil, ensuring the grapes reach good ripeness. The wines are smooth and round. Their robe evokes a flame; it is bright, vivid, luminous and scarlet. It gives off aromas of black fruits (blackcurrant, blackberry) and red fruits (cherry, redcurrant). When young, this wine offers the palate the crisp charm of fresh grapes. With age, aromas of truffle, leather and spices develop. This is a new terroir for us at the estate: we harvested the first fruit from this plot in 2007 – quite a discovery!

Vinification

The grapes are hand-picked and sorted first at the plot and, then, a second time in the vat room where they are destemmed – or not. The percentage of whole bunches in the cuvée depends on the choice of the winemaker and on the vintage.

Maturation

Maturation in tanks lasts around fifteen days. Then, the grapes are pressed and the wine is placed in casks, 30% of which are new barrels. The maturation lasts from 12 to 18 months depending on the vintage.

Wine and food pairing

The Beaune wines are generous and show great aromatic power and a fleshy texture, which predestines them to accompany musky and very firm meats, such as furred game, roasted or braised.
