Vinification

Bourgogne Pinot Noir is vinified in an open vat. After a period of maceration, the fermentation lasts more or less one week under controlled temperatures. For this cuvée, a quality of generosity is sought, above all.

Maturation

The wine is then placed in barrels or vats for a maturation phase lasting 9 to 12 months depending on the vintage.
