Our plot known as Les Lavières is located on the hillside and was planted in 1951.
Savigny LES LAVIÈRES has a garnet robe, an elegant nose of redcurrant and violets, and a full, round and tannic palate for a satisfying mouthfeel.

Vinification

We pay particular attention to our Les Lavières plot, which requires a lot of time before it is expressed in the wine during vinification. The grapes are harvested manually and sorted at the plot, then again in the vat room, and a few whole bunches are retained depending on the vintage. The vatting lasts about fifteen days – just as long as is necessary for the expression of this wine, which is both fine and complex.

Maturation

The grapes are then pressed, and the wine is transferred to oak barrels. Maturation lasts from 12 to 18 months depending on the vintage.
