Hautes Côtes de BeauneLes Champans
The Burgundy vineyards on the Hautes Côtes de Beaune were all planted high and wide by my father, and were of the Pinot Noir grape variety. Following the restructuring of part of the plot, we chose to add some Chardonnay vines with a higher planting density. We love the fresh and lively aspect of this wine and the generosity of Chardonnay.

Vinification
As with our white Savigny, the juices are pressed immediately to then undergo alcoholic fermentation in a thermoregulated tank, and it is at the end of this that we place the wines in barrels for maturation in the cellar.
