Savigny-les Beauneles Gollardes

This plot of 0.80 hectare is located on the slopes of the town and enjoys excellent sunshine.
These vines are roughly forty years old and produce rich and elegant wines that can be enjoyed after being aged for a few years; this is especially thanks to the marked presence of tannins. The location of this plot gives its wines the mineral notes that are naturally associated with the red fruit notes typical of the Pinot Noir grape variety.

Vinification

The ‘Gollardes’ grapes are harvested by hand, enabling them to be sorted at the plot and in the vat room, which means we can retain part of the harvest in whole bunches when the vintage lends itself to it. The alcoholic fermentation is closely monitored, allowing us to bring out the complexity and finesse of the terroir in this wine.

Maturation

The vatting period lasts about fifteen days. The grapes are then pressed, and the wine is transferred to barrels. Maturation continues from 12 to 18 months depending on the vintage.
