Savigny-Les-Beaune Moutier Amet

The 2008 vintage is our first cuvée from this plot, planted in 1939, which our estate recently acquired. Like Savigny les Beaune, Volnay wines are described as feminine. The vinification process might be expected to be usual for us; however, this is not the case. Vinifying grapes from a terroir of this reputation is a great adventure. We unveil a bright ruby robe, aromas that sing violet, redcurrant, cherry. With age, aromas of spices, game and cooked prune develop. This cuvée is rich and elegant. It combines great aromatic complexity and the finesse of the tannins. In the end, those who taste it are left with the lingering trace of lipstick, the imprint of a kiss...

Vinification

Manual harvesting allows for a first sorting at the plot to assess the quality of the grapes. In addition, a second sorting is carried out in the vat room before deciding whether or not to destem the grapes. If the vintage lends itself to it, whole bunches bring a beautiful aromatic complexity, and tannins of incredible finesse. Fermentation then proceeds in an open vat, with daily monitoring of our cuvée.

Maturation

The vatting period lasts about fifteen days. Then, the grapes are pressed, and the wine is placed in barrels, 30% of which are new barrels. The maturation lasts from 12 to 18 months depending on the vintage.

Roasted poultry or, for the more adventurous, a meat tagine, or strongly flavoured cheese.
