Bourgogne Hautes Côtes de Beaune

The vines in this plot were planted high and wide by my father; the plot was partially replanted with low vines in 2017. This wine is the fruit of the work of two generations.
Our plot is located on a south-facing hillside where the soil is very shallow, which allows us to better manage the yields, and which also makes the wine considerably powerful for a regional appellation.
These red wines are often dark in colour with aromas of fresh red fruits in their youth, and candied fruits or sometimes a hint of animal aromas when they are more mature. Their flavour is firm, enhanced by good acidity and very present tannins.

Vinification

This wine is vinified in an open vat. After a period of maceration, the fermentation lasts more or less one week under controlled temperatures.

Maturation

The wine is then placed in barrels or vats for a maturation phase lasting 9 to 12 months depending on the vintage.
